Ingredients

  • 1 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 c. sugar
  • 3/4 c. corn oil
  • 2 eggs
  • 1 1/2 c. shredded carrots
  • 3/4 c. flaked coconut

Method

  • Grease 13 x 9 x 2-inch baking pan.
  • Sift flour, baking soda, cinnamon and salt.
  • Mix together sugar and oil.
  • Add eggs, one at a time, beating well after each addition.
  • Add flour mixture, alternating with carrots, about 1/3 at a time.
  • Stir in coconut. Pour into cake pan.
  • Bake at 350° for 25 to 30 minutes.
  • Cool 10 minutes.
  • Frost with cream cheese frosting.
