Ingredients
- 1 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 c. sugar
- 3/4 c. corn oil
- 2 eggs
- 1 1/2 c. shredded carrots
- 3/4 c. flaked coconut
Method
- Grease 13 x 9 x 2-inch baking pan.
- Sift flour, baking soda, cinnamon and salt.
- Mix together sugar and oil.
- Add eggs, one at a time, beating well after each addition.
- Add flour mixture, alternating with carrots, about 1/3 at a time.
- Stir in coconut. Pour into cake pan.
- Bake at 350° for 25 to 30 minutes.
- Cool 10 minutes.
- Frost with cream cheese frosting.
