Ingredients

  • 6 ounces peach flavor gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups vanilla ice cream, softened
  • 1 pinch nutmeg
  • 1 lb fresh peaches (reserve 1/2 fresh peach or 6 peach slices) or 1 lb frozen peaches, sliced into 1/2-inch pieces (reserve 1/2 fresh peach or 6 peach slices)
  • lettuce leaf

Method

  • in a large bowl dissolve gelatin in boiling water, stir in cold water, ice cream and nutmeg.
  • whisk until ice cream is melted.
  • refrigerate until slightly thickened (about 30 min).
  • whisk mixture until smooth, fold in peaches.
  • pour into greased 6 cup mold.
  • refrigerate until firm, 6 hours or overnight.
  • unmold onto lettuce leaves, garnish with reserved peach slices.
