Ingredients
- 2 c. all-purpose flour
- 2 1/2 tsp. soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. oil
- 2 c. sugar
- 3 eggs
- 1 c. (8 oz.) crushed pineapple, undrained
- 1 1/3 c. grated carrots
- 2 c. Bakers coconut
Method
- Mix flour, soda, cinnamon and salt.
- Beat oil, sugar and eggs until well blended.
- Add flour mixture and beat until smooth. Stir in pineapple, carrots and coconut.
- Pour into greased 13 x 9-inch pan.
- Bake at 350° for 50 minutes or until done.
