Ingredients

  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. oil
  • 2 c. flour (plain)
  • 2 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 3 c. carrots, grated
  • 8 oz. cream cheese
  • 1 box confectioners sugar
  • 1/2 stick margarine
  • 1 c. pecans, chopped
  • 2 tsp. vanilla

Method

  • Mix sugar and oil; blend and beat eggs into mixture.
  • Add sifted flour, salt, soda and cinnamon.
  • Add carrots.
  • Pour into 2 (9-inch) pans.
  • Bake at 350° for 30 minutes.
  • Soften cream cheese and margarine.
  • Add all other ingredients and mix well.
  • Spread on layers.
