Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 4 eggs
  • 1 1/2 tsp. baking soda
  • 2 c. finely grated carrots
  • 1 (8 1/2 oz.) can crushed pineapple, drained
  • 1/2 c. chopped nuts

Method

  • Mix together flour, baking powder, baking soda, salt and cinnamon.
  • Add sugar, oil and eggs; beat well.
  • Add carrots, pineapple, and nuts; blend thoroughly.
  • Pour into greased and floured 10 x 14-inch pan or 3 (9-inch) round layer cake pans. Bake at 350° for 35 to 40 minutes for layer pans, 40 to 50 minutes for 10 x 14-inch pan.
  • Cool 5 minutes in pan before turning out to cool thoroughly.
