- 8 oz. pork sausage
- 2 c. yellow corn meal
- 1/2 c. all-purpose flour
- 1 Tbsp. baking powder
- 1 tsp. soda
- 1 tsp. salt
- 2 eggs, beaten
- 1 small can green chilies with juice, diced
- 1 large onion, chopped
- 1 (11 oz.) can Mexican corn
- 2 c. buttermilk
- 1/2 c. sharp Cheddar cheese, shredded
Method
- Brown sausage and save 2 to 3 tablespoons grease; set aside. Combine dry ingredients.
- Add all wet ingredients.
- Add sausage and reserved grease.
- Turn into greased 9 x 13-inch pan.
- Bake at 450° for 20 to 25 minutes.
