Ingredients
- 1 c. sugar
- 3/4 c. oil
- 2 eggs
- 1 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. grated carrots (3 large)
- 1/2 c. nuts, chopped
Method
- Cream the sugar, oil and eggs until well blended.
- Stir in flour, cinnamon, soda and salt.
- Fold in grated carrots and nuts. Pour into lightly greased and lightly floured 9 x 13-inch pan. Bake in a 350° oven until tests done with a toothpick for 25 to 30 minutes.
- Frost while warm with Brown Butter Frosting.
