Ingredients

  • 1 c. sugar
  • 3/4 c. oil
  • 2 eggs
  • 1 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. grated carrots (3 large)
  • 1/2 c. nuts, chopped

Method

  • Cream the sugar, oil and eggs until well blended.
  • Stir in flour, cinnamon, soda and salt.
  • Fold in grated carrots and nuts. Pour into lightly greased and lightly floured 9 x 13-inch pan. Bake in a 350° oven until tests done with a toothpick for 25 to 30 minutes.
  • Frost while warm with Brown Butter Frosting.
