- 3/4 c. apple cider vinegar
- 3/4 c. Mazola oil
- 1/2 c. sugar
- 1 tsp. salt
- 1 tsp. pepper
- 1 (10 oz.) can white Shoepeg corn
- 1 small can French-style green beans
- 1 small can LeSueur English peas
- 1 c. chopped bell pepper
- 1 c. chopped celery
- 2 bunches green onions, chopped
- 1 small jar chopped pimentos
Method
- Mix together the first 5 ingredients and bring to a boil; cool.
- Drain vegetables and mix.
- Pour the cooled mixture over the vegetables and allow to marinate overnight.
- Will keep for a long time.
- The longer it marinates, the better it tastes.
