Ingredients

  • 1 pound, 1-2/3 ounces, weight Carrots
  • 1/2 pints Water
  • 3 whole Small/Medium Oranges

Method

  • Clean the carrots well. Scrub them under running water and if you have a vegetable brush, I would recommend to use it, otherwise and well rinsed sponge will work great too. Once they have been cleaned, cut the heads off, and then cut them in chunks. Put them into a food processor and process until finely processed. Tip: If you don't have a processor, grating the carrot will work just the same.
  • Put the processed carrots in a bowl, and pour some warm water over the top until it just covers the carrots. Leave this to rest for 30-45 minutes.
  • Optional: You don't have to do this part, but I do. Place the rested carrot water with the fibre in a blender with half a pint of water, and blend for about 10-20 seconds. Be aware you may need to do this two times because the amount you have may not fit in your blender, so divide the pint of water if this happens. Use a sieve/colander placed over a pitcher, to separate the fibre from the juice.
  • For the orange juice, I will recommend to squeeze one orange at a time into the pitcher of carrot juice and taste. I always find that it works best with the juice of 3 small/medium oranges, but your palette may be different.
  • Once you have finished this stage, add a few sliced oranges and some ice to make it cool and serve immediately. Or place the juice into a Kilner/Mason Jar and refrigerate. It will be fine for 2 to 3 days. If you have a big family share the goodness around! I've shared my goodness with my mum and she loves it!
