Ingredients

  • 4 chicken breasts
  • 1/4 cup salsa
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded cheese
  • 2 slices bacon, chopped
  • 1 small onion, chopped
  • 2 cups grape tomatoes
  • 2 cups long grain brown rice, cooked
  • 1/4 cup sour cream

Method

  • Heat oven to 400 degrees. Place chicen on foil-covered baking sheet. Top with salsa. Bake 20 min, topping with chips and cheese the last 5 min.
  • Meanwhile, cook bacon, drain on paper towels. Cook onion for 5 min. Stir in tomatoes, cook for 4 - 5 min, or until tomatoes begin to pop. Add rice. Cook until heated thru. Stir in bacon.
  • Top chicken with sour cream. Serve with rice mixture
