Ingredients
- 1 (10 oz.) pkg. frozen chopped spinach
- 4 eggs, beaten
- 3/4 c. cream
- 1 1/4 c. milk
- salt and pepper to taste
- 2 Tbsp. lemon juice
- 2 Tbsp. parsley, chopped
- 1/2 lb. Feta cheese
- 1 quiche crust (pie crust)
- 3 Tbsp. Parmesan cheese
Method
- Defrost spinach and drain (do not cook).
- Mix eggs, cream and milk; add salt, pepper, lemon juice and parsley.
- Stir in spinach and Feta cheese.
- Fill quiche crust; place Parmesan cheese on top. Bake at 375° for 30 to 40 minutes or until a knife inserted comes out dry.
- Serve with a salad.
