Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 4 eggs, beaten
  • 3/4 c. cream
  • 1 1/4 c. milk
  • salt and pepper to taste
  • 2 Tbsp. lemon juice
  • 2 Tbsp. parsley, chopped
  • 1/2 lb. Feta cheese
  • 1 quiche crust (pie crust)
  • 3 Tbsp. Parmesan cheese

Method

  • Defrost spinach and drain (do not cook).
  • Mix eggs, cream and milk; add salt, pepper, lemon juice and parsley.
  • Stir in spinach and Feta cheese.
  • Fill quiche crust; place Parmesan cheese on top. Bake at 375° for 30 to 40 minutes or until a knife inserted comes out dry.
  • Serve with a salad.
