Ingredients

  • 1/2 cup butter, chopped
  • 12.5 oz white chocolate, chopped
  • 1/2 cup all-purpose flour, sifted
  • 1/2 cup granulated sugar
  • 2 None eggs, lightly beaten
  • 1/2 cup macadamia nuts, toasted, chopped
  • 4.5 oz raspberries
  • None None powdered sugar, for dusting

Method

  • Preheat oven to 350°F. Lightly grease an 8 inch square cake pan. Line base and sides with parchment paper.
  • Melt butter and 1/2 the chocolate over low heat, stirring, until melted. Let cool for 10 mins. Mix in flour, sugar, eggs, macadamia nuts and remaining chocolate until combined. Fold in raspberries. Transfer to prepared pan and bake for 35-40 mins, until a skewer inserted in the center comes out clean. Let cool in pan.
  • Cut into squares and serve dusted with powdered sugar.
