Ingredients

  • 1 (7.5 oz.) pkg. bean threads
  • 1 c. sugar
  • 1 c. rice vinegar
  • 1 cucumber, grated
  • 2 c. minced celery
  • 1 c. minced green onion
  • 2 c. grated carrots
  • 1 can minced water chestnuts
  • 1/2 c. slivered almonds
  • 1/4 c. toasted sesame seed
  • 1 can drained shrimp, salad shrimp, salad crab or meat of your choice

Method

  • Bring 2 quarts of water to a boil; add the bean threads and bring back to a rolling boil for 1 minute.
  • Remove from heat and let stand for 2 minutes.
  • Then rinse until bean threads are cool, put into a large bowl and cut bean threads into smaller pieces.
