Ingredients

  • 3/4 c. shortening
  • 1 c. granulated sugar
  • 1 c. brown sugar
  • 1 c. light crushed Skinner raisin bran
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 2 eggs
  • 1 c. oatmeal
  • 2 c. flour
  • 1 c. salted peanuts

Method

  • Thoroughly cream shortening with both sugars; add eggs, one at a time, and blend well.
  • Stir in oatmeal and Raisin Bran.
  • Sift flour with baking powder and soda.
  • Stir into creamed mixture.
  • Add vanilla and peanuts.
  • Roll into small balls; place on greased baking sheet and press with the tines of a fork to flatten.
  • Bake in moderately hot oven (375°) for 10 minutes or until lightly browned.
  • Makes 7 dozen small cookies.
