Ingredients

  • coconut oil or olive oil
  • 1 large onion, chopped
  • 16 ounces rice (uncooked)
  • 1 (16 ounce) can red beans (or kidney beans)
  • 16 ounces coconut milk
  • 16 ounces chicken stock
  • 1 tablespoon fresh thyme
  • 34 teaspoon allspice
  • 2 bay leaves
  • 3 scallions, chopped
  • 2 -3 garlic, minced
  • 1 scotch bonnet pepper, whole
  • 1 -2 teaspoon brown sugar
  • salt, pepper

Method

  • Add oil to a pan and add onions.
  • When onions are soft, add rice.
  • Stir.
  • Cook for 1-2 minutes.
  • Then add rest of ingredients.
  • Bring to a boil and simmer until rice is done.
  • Keep checking and add water or more chicken stock if necessary.
  • Once done, pull out the bay leaves before serving.
