Ingredients

  • 6 trimmed pork chops
  • 3 Tbsp. salad oil
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1/4 c. peanut butter
  • 1 1/2 Tbsp. brown sugar
  • 1 tsp. salt
  • 1/2 tsp. curry powder
  • 2 tsp. soy sauce
  • 1/4 tsp. pepper
  • 1 c. warm water
  • 1/2 c. orange juice
  • 1 small orange, sliced
  • 1 small pepper, cut in rings

Method

  • Brown chops in oil and drain off fat.
  • Sprinkle onion and garlic over and around chops.
  • Combine next 7 ingredients.
  • Mix well.
  • Stir in juice and pour over chops.
  • Place orange slices and pepper rings on chops.
  • Simmer covered about 50 minutes or until chops are tender.
  • Stir sauce and baste occasionally.
  • Add small amount of water if needed.
