Ingredients

  • 1/2 c. soft butter
  • 1 c. honey
  • 3 eggs, separated
  • 3 Tbsp. cornstarch
  • 1 1/2 c. buttermilk
  • 1 tsp. lemon rind
  • 1 Tbsp. lemon juice
  • 1 1/2 c. peeled, sliced and cooked peaches or plums
  • ground nutmeg

Method

  • Preheat oven to 350°.
  • Roll out pastry and place in pie pan. In large bowl, beat honey, butter and egg yolks together well. Dissolve cornstarch in buttermilk and add to butter mixture along with lemon juice and rind.
  • Mix in fruit.
  • Beat egg whites until stiff and then fold into rest of filling carefully.
  • Turn into unbaked pie crust, then sprinkle with nutmeg.
  • Bake at 350° for 20 minutes.
  • Reduce heat to 300° and bake for 15 to 20 more minutes until set.
  • Cool before serving.
