- 2 c. chicken, cooked and shredded
- 1 small onion, chopped
- 1 c. Ricotta cheese
- 2 Tbsp. parsley
- 2 tsp. garlic, minced
- 1 (15 oz.) box manicotti pasta (or large pasta shells)
- 1 (15 oz.) jar spaghetti sauce
- 2 c. Mozzarella cheese, grated
- Parmesan cheese to taste
- 1 tsp. olive oil
Method
- Cook
- manicotti according to package directions.
- Saute onion and
- garlic
- in
- olive
- oil.
- In
- a large bowl, combine chicken, onion,
- garlic,
- Ricotta
- cheese,
- parsley and 1 cup Mozzarella cheese.
- Mix thoroughly (you may even want to blend in
- food processor).
- Stuff chicken mixture into manicotti pasta using a small spoon.
- Place in a 13 x 9-inch baking dish and pour spaghetti sauce over the manicotti.
- Top with remaining Mozzarella and Parmesan cheese.
- Cover with foil and bake at 350° for
- 40
- minutes.
- Remove foil and bake 10 minutes to slightly brown top.
