Ingredients

  • 2 c. chicken, cooked and shredded
  • 1 small onion, chopped
  • 1 c. Ricotta cheese
  • 2 Tbsp. parsley
  • 2 tsp. garlic, minced
  • 1 (15 oz.) box manicotti pasta (or large pasta shells)
  • 1 (15 oz.) jar spaghetti sauce
  • 2 c. Mozzarella cheese, grated
  • Parmesan cheese to taste
  • 1 tsp. olive oil

Method

  • Cook
  • manicotti according to package directions.
  • Saute onion and
  • garlic
  • in
  • olive
  • oil.
  • In
  • a large bowl, combine chicken, onion,
  • garlic,
  • Ricotta
  • cheese,
  • parsley and 1 cup Mozzarella cheese.
  • Mix thoroughly (you may even want to blend in
  • food processor).
  • Stuff chicken mixture into manicotti pasta using a small spoon.
  • Place in a 13 x 9-inch baking dish and pour spaghetti sauce over the manicotti.
  • Top with remaining Mozzarella and Parmesan cheese.
  • Cover with foil and bake at 350° for
  • 40
  • minutes.
  • Remove foil and bake 10 minutes to slightly brown top.
