Ingredients
- 1 medium cantaloupe, seeded and cut into quarters
- 4 scoops low-fat vanilla ice cream
- 2 egg whites
- pinch of cream of tartar
- 2 Tbsp. nonfat dry milk
- 1 tsp. sugar
Method
- Beat egg whites and cream of tartar to soft peaks.
- Beat in dry milk and sugar.
- Beat to stiff peaks.
- Place cantaloupe slices on cookie sheet.
- Top each with a scoop of ice cream.
- Cover with meringue, covering each cantaloupe slice and ice cream completely. Bake 5 minutes at 500° or until lightly browned.
