Ingredients

  • 1 medium cantaloupe, seeded and cut into quarters
  • 4 scoops low-fat vanilla ice cream
  • 2 egg whites
  • pinch of cream of tartar
  • 2 Tbsp. nonfat dry milk
  • 1 tsp. sugar

Method

  • Beat egg whites and cream of tartar to soft peaks.
  • Beat in dry milk and sugar.
  • Beat to stiff peaks.
  • Place cantaloupe slices on cookie sheet.
  • Top each with a scoop of ice cream.
  • Cover with meringue, covering each cantaloupe slice and ice cream completely. Bake 5 minutes at 500° or until lightly browned.
