- 4 x 200g salmon steaks
- salt and pepper, to taste
- 1/3 cup KRAFT Creamy Egg Mayonnaise
- 2 tablespoons milk
- 1 tablespoon baby capers, rinsed, drained and finely chopped
- 1 tablespoon finely chopped Italian parsley
- 1 tablespoon finely chopped chives
- 2 teaspoons Dijon mustard
- grated rind of 1/2 lemon
- mashed potato, to serve Safeway 2 pkg For $5.00 thru 02/09
- seasonal vegetables, to serve Target 2 lb For $3.00 thru 02/06
Method
- Season the salmon steaks with salt and pepper then cook in an oiled frying pan or grill pan until cooked to your liking.
- Keep warm.
- Meanwhile, combine the mayonnaise, milk, capers, parsley, chives, mustard and rind in a microwave safe bowl until smooth.
- Heat gently in microwave at 50% power for 2 minutes or until warmed through.
- Serve the salmon over mashed potatoes and seasonal vegetables.
- Drizzle with sauce and serve immediately.
