Ingredients

  • 1 fresh baguette, cut into sandwich parts
  • 1 tablespoon good quality unsalted butter, per sandwich (so 4 tbsp if making 4 sandwiches)
  • 1 apple, Cox's or Gala preferably (2 apples for 4 sandwiches)
  • 1 slice of English blue cheese, preferably a Stilton (again, or 4 slices for 4 sandwiches)

Method

  • Spread the butter onto the bottom half of your sandwich parts.
  • Cut the apple into wedges about 1/2 inch thick. I find that I need about a half an apple for a 6-inch long sandwich.
  • Pile the apple wedges onto the buttered half of the baguette.
  • Lay the slice of blue cheese on top of the apple wedges and top with the other half of the baguette.
  • Give it a gentle smash, and enjoy.
