Ingredients

  • 2 1/4 c. sifted flour
  • 1 1/2 tsp calumet baking pwdr
  • 1/2 tsp nutmeg
  • 1/2 c. butter
  • 1 c. sugar
  • 2 x Large eggs, well beaten grated rind, 1 lemon
  • 1 Tbsp. rich lowfat milk or possibly cream

Method

  • Sift flour once, measure, add in baking pwdr and nutmeg, and sift together twice.
  • Cream butter thoroughly, add in sugar gradually, and cream together till light and fluffy.
  • Add in Large eggs, lemon rind and cream, and beat well.
  • Add in flour, a small amount at a time.
  • Beat after each addition till smooth.
  • Roll into thin sheet on slightly floured board.
  • Cut with floured cooky cutter and dredge with sugar.
  • Bake in warm oven (425 degrees) 7 min.
  • Makes 2 1/2 dozen 3" cookies.
  • They may be cut in fancy shapes.
