Ingredients
- 4 cucumbers, pared
- 1 sweet Spanish onion, sliced
- 1 c. sugar
- 1 c. water
- 1/2 c. vinegar
- 1/2 c. oil
- celery seed
Method
- Score cucumbers lengthwise with tines of fork.
- Slice thinly and put in salted ice water with onion.
- Let stand 1 to 2 hours. Cook sugar and water over low heat until sugar is dissolved. Cool.
- Add vinegar and oil and mix well.
- Drain cucumbers and onion.
- Pour vinegar and oil mixture over them.
- Cover and refrigerate overnight.
- Sprinkle with celery seed before serving. Good with beans.
- Yields 8 servings.
