Ingredients

  • 4 cucumbers, pared
  • 1 sweet Spanish onion, sliced
  • 1 c. sugar
  • 1 c. water
  • 1/2 c. vinegar
  • 1/2 c. oil
  • celery seed

Method

  • Score cucumbers lengthwise with tines of fork.
  • Slice thinly and put in salted ice water with onion.
  • Let stand 1 to 2 hours. Cook sugar and water over low heat until sugar is dissolved. Cool.
  • Add vinegar and oil and mix well.
  • Drain cucumbers and onion.
  • Pour vinegar and oil mixture over them.
  • Cover and refrigerate overnight.
  • Sprinkle with celery seed before serving. Good with beans.
  • Yields 8 servings.
