Ingredients

  • 2-1/2 cups basmati rice, uncooked
  • 2-1/2 cups red peppers, chopped
  • 2-1/2 cups green peppers, chopped
  • 2-1/2 cups frozen peas, thawed, drained
  • 1 cup dried currants
  • 2/3 cup red onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 2-1/2 cups KRAFT Light Italian Reduced Fat Dressing

Method

  • Cook rice as directed on package; place in large bowl.
  • Cool.
  • Fluff rice with fork.
  • Add all remaining ingredients except dressing; mix lightly.
  • Add dressing; toss lightly to coat.
  • Serve immediately.
  • Or, cover and refrigerate several hours to serve chilled.
