Ingredients
- 2-1/2 cups basmati rice, uncooked
- 2-1/2 cups red peppers, chopped
- 2-1/2 cups green peppers, chopped
- 2-1/2 cups frozen peas, thawed, drained
- 1 cup dried currants
- 2/3 cup red onions, chopped
- 1/4 cup fresh parsley, chopped
- 2-1/2 cups KRAFT Light Italian Reduced Fat Dressing
Method
- Cook rice as directed on package; place in large bowl.
- Cool.
- Fluff rice with fork.
- Add all remaining ingredients except dressing; mix lightly.
- Add dressing; toss lightly to coat.
- Serve immediately.
- Or, cover and refrigerate several hours to serve chilled.
