Ingredients

  • 1 tbsp olive oil, extra virgin
  • 1 cup Uncle Ben's Brown Rice
  • 1 tsp Chipotle Chile Powder
  • 1 tsp Cajun Seasoning
  • 1 clove garlic
  • 1 1/2 cup Chicken Broth from (Wylers Granules)
  • 1 can (15 oz) Bush's Black Beans, Rinsed
  • 1 can (14.5 oz) Del Monte Dices Tomatoes- Zesty Italian
  • 1 can 10 oz Ro*Tel Diced Tomatoes & Green Chilies, Drained
  • 1 large Chicken Breast, Diced
  • 1/2 tbsp olive oil, extra virgin
  • 1/2 tsp Cajun Seasoning

Method

  • Heat a large non-stick skillet and (1 Tbs.)
  • of the oil over a medium heat.
  • Add Rice, Chili powder and (1 teaspoon) Cajun Seasoning to Skillet: cook for 2 minutes or until golden brown, stirring continually.
  • Add ingredients below; reduce heat to a simmer and cover.
  • In a medium skillet mix oil and cajun seasoning; heat to medium low.
  • Mix diced chicken into oil and seasoning.
  • Cook until all sides are browned.
  • drain and add chicken to the large skillet.
  • Let simmer 20 minutes or until rice is tender.
  • Let stand 5 minutes and fluff with a fork.
  • Enjoy.
