- 1/3 c. yellow cornmeal
- approximately 2 c. flour
- 2 tsp. olive oil
- 1 large onion, minced
- 1/2 tsp. dried basil
- 1/2 tsp. salt
- 3 medium tomatoes
- 1 (8 oz.) Mozzarella
- 3 1/2 oz. pitted ripe olives
- 3 1/2 oz. sliced pepperoni
- 2 oz. anchovy fillets (optional)
- 1/4 c. packed thinly sliced basil
- 1/4 tsp. cracked black pepper
Method
- About 1 1/4 hours before serving:
- In medium bowl, put cornmeal and 2 cups flour.
- Gradually stir in 3/4 cup cold water with fork until mixture becomes stiff and leaves side of bowl. Knead dough 2 minutes or until smooth.
- Cover bowl with plastic wrap and let rise 15 minutes.
