Ingredients

  • 1/3 c. yellow cornmeal
  • approximately 2 c. flour
  • 2 tsp. olive oil
  • 1 large onion, minced
  • 1/2 tsp. dried basil
  • 1/2 tsp. salt
  • 3 medium tomatoes
  • 1 (8 oz.) Mozzarella
  • 3 1/2 oz. pitted ripe olives
  • 3 1/2 oz. sliced pepperoni
  • 2 oz. anchovy fillets (optional)
  • 1/4 c. packed thinly sliced basil
  • 1/4 tsp. cracked black pepper

Method

  • About 1 1/4 hours before serving:
  • In medium bowl, put cornmeal and 2 cups flour.
  • Gradually stir in 3/4 cup cold water with fork until mixture becomes stiff and leaves side of bowl. Knead dough 2 minutes or until smooth.
  • Cover bowl with plastic wrap and let rise 15 minutes.
