Ingredients

  • 1 medium chopped onion
  • 1 Tbsp. olive oil
  • 1 medium green pepper
  • 1/2 c. chopped celery
  • 3 minced garlic cloves
  • 4 c. skimmed chicken broth
  • 1 (16 oz.) can chopped tomatoes
  • 2 small pieces bay leaf
  • 1/2 tsp. oregano, dried
  • 1/2 tsp. dried basil
  • 3 c. whole kernel corn
  • 1 c. washed black-eyed peas
  • 3/4 tsp. paprika
  • 1/4 tsp. red pepper
  • 1/4 tsp. black pepper
  • salt to taste
  • 2 tsp. sugar

Method

  • You may substitute beef broth and 1 can (6 ounces) tomato sauce in place of whole tomatoes and chicken broth.
