Ingredients

  • 4 -5 leaves kale
  • 12 cup fat free Greek yogurt
  • 1 vegetarian sausage patties
  • 1 roma tomato
  • 1 green onion
  • 12 teaspoon cajun spices (to taste)
  • 1 12 teaspoons canola oil
  • salt
  • 12 teaspoon lemon juice

Method

  • Remove stems from kale and chop into thin strips.
  • Dice green onion.
  • Dice tomato.
  • Mix yogurt, salt and Cajun seasoning , if desired.
  • Let sit 5 minutes or more.
  • Cook sausage according to package directions.
  • When done, cut into 6 or so pieces.
  • Heat oil in a small frying pan on high temperature until hot.
  • Throw kale in, tossing occasionally.
  • Cook until it begins to darken.
  • If the kale burns a little, that's OK.
  • Turn heat down.
  • Add onion and tomatoes to kale.
  • Cook until tomato pieces are warm.
  • Add yogurt mixture to pan and cook until warm.
  • It may separate some or get runny.
  • That's OK.
  • Add sausage to pan and stir well.
  • Add lemon juice and stir.
  • Remove from heat and eat.
