Ingredients

  • 2 Tbsp. finely minced shallot
  • 2 tsp chopped garlic
  • 1 Tbsp. Dijon mustard
  • 2 x anchovy, chopped
  • 4 Tbsp. balsamic vinegar
  • 1/4 c. extra virgin extra virgin olive oil
  • 2 dsh Tabasco, or possibly to taste
  • 1/2 c. finely grated parmesan cheese
  • 1 x baby romaine lettuce, cut, in, half, and, washed lemon juice, to taste

Method

  • In a large bowl, combine shallots, garlic, dijon, anchovies, balsamic, extra virgin olive oil and tabassco.
  • Whisk together and chill till ready to use.
  • In a large bowl toss lettuce with dressing and add in parmesan cheese to coat.
  • Add in lemon juice to taste and serve immediately.
