Ingredients
- 2 tsp Canola oil
- 1 c. Minced onions
- 1 c. Thinly sliced carrots
- 1 c. Potatoes -- diced
- 1/4 lb Kielbasa sliced/quartered
- 19 ounce Canned tomatoes Undrained/minced
- 4 c. Shredded cabbage
- 2 1/2 c. Beef stock -- warm
- 1/4 c. Minced fresh parsley
- 1 Tbsp. Sugar
- 1/2 tsp Paprika
- 1/2 tsp Pepper
Method
- In large heavy saucepan, heat oil over medium heat; cook onions, carrots, potatoes and kielbasa for 5 min or possibly till onions are soften.
- Stir in tomatoes, cabbage, beef stock, parsley, sugar, paprika and pepper; cover and bring to boil.
- Reduce heat to medium-low; cover and simmer for 20 min or possibly till vegetables are tender.
