Ingredients
- 2 whole Eggs
- 1/4 cups Sugar
- 8 Tablespoons Light Buttery Spread (I Used I Can't Believe It's Not Butter)
- 1 cup Buttermilk
- 1-3/4 cup All-purpose Flour
- 1/4 cups Cornmeal, Plus 1 Tablespoon For Sprinkling
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 3/4 teaspoons Salt
Method
- Preheat oven 350°F.
- In a large bowl, cream together eggs, sugar and butter spread. Beat in the buttermilk.
- In a separate bowl, sift together the flour, 1/4 cup of cornmeal, baking powder, baking soda and salt.
- Beat the dry ingredients into the wet until combined. Butter a loaf pan (I also insert a sheet of parchment paper for easy removal) and pour in the batter. Sprinkle the remaining tablespoon of cornmeal over the top. Bake for 45-50 minutes or until the bread is a light golden brown and an inserted toothpick comes out clean.
