Ingredients

  • 1 box Escort crackers
  • 4 chicken breasts, cooked and cubed
  • 1 (8 oz.) sour cream
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 stick butter
  • 1 can sliced water chestnuts

Method

  • Crush crackers; melt margarine and mix with 1/2 of the cracker crumbs.
  • Press 1/2 of this mixture into bottom of 2-quart baking dish.
  • Reserve some for the top of casserole.
  • Mix the soups, sour cream and water chestnuts.
  • Layer chicken on top of crumbs, then some soup mix, then some of the unbuttered crumbs.
  • Repeat, ending with soup mix.
  • Add the reserved buttered crackers to the top. Bake at 400° for 30 to 35 minutes.
