Ingredients

  • 1 1/2 c. oil
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 3 eggs
  • 2 c. plain flour
  • 2 Tbsp. baking powder
  • 1 tsp. soda
  • 8 oz. crushed pineapple (undrained)
  • 2 c. grated butternut squash
  • 1 c. walnuts

Method

  • In large bowl, combine first 6 ingredients. Beat eggs. Add to spice mixture. Mix dry ingredients together. Slowly add to spice mixture. Beat 5 minutes. Add pineapple, squash and nuts. Fold in. Pour in large, greased tube pan. Bake at 300° for 55 minutes. Cool. Frost with Buttercream Frosting or your favorite frosting.
