Ingredients
- 1 1/4 c. shortening
- 3 c. sugar
- 6 eggs
- 3 c. sifted cake flour, divided
- 1 c. buttermilk
- 1/4 tsp. soda
- 1/4 tsp. salt
- 1/2 tsp. lemon extract (optional)
- 1/2 tsp. vanilla extract
- 3 or 4 drops butter flavoring
Method
- Cream shortening and sugar until light and fluffy.
- Add eggs, one at a time, beating 30 seconds after each.
- Stir 1 cup flour into creamed mixture until blended.
- Combine buttermilk, soda, salt, lemon extract, vanilla extract and butter flavoring.
- Stir 1/2 of buttermilk mixture into creamed mixture until blended. Stir 1 cup flour into creamed mixture, then remaining buttermilk mixture, and end with 1 cup flour.
- Pour into well-greased and floured 10-inch tube pan.
- Bake at 325° for 1 1/2 hours.
- Cool 10 to 15 minutes before removing from pan.
- Don't fill pan too full; it overflows when cooking.
