Ingredients

  • 1 1/4 c. shortening
  • 3 c. sugar
  • 6 eggs
  • 3 c. sifted cake flour, divided
  • 1 c. buttermilk
  • 1/4 tsp. soda
  • 1/4 tsp. salt
  • 1/2 tsp. lemon extract (optional)
  • 1/2 tsp. vanilla extract
  • 3 or 4 drops butter flavoring

Method

  • Cream shortening and sugar until light and fluffy.
  • Add eggs, one at a time, beating 30 seconds after each.
  • Stir 1 cup flour into creamed mixture until blended.
  • Combine buttermilk, soda, salt, lemon extract, vanilla extract and butter flavoring.
  • Stir 1/2 of buttermilk mixture into creamed mixture until blended. Stir 1 cup flour into creamed mixture, then remaining buttermilk mixture, and end with 1 cup flour.
  • Pour into well-greased and floured 10-inch tube pan.
  • Bake at 325° for 1 1/2 hours.
  • Cool 10 to 15 minutes before removing from pan.
  • Don't fill pan too full; it overflows when cooking.
