Ingredients

  • 4 Tbsp. soy sauce
  • 2 garlic cloves, mashed to a paste
  • juice of 1/2 lemon
  • 2 tsp. sugar
  • 2 lb. salmon fillets, skinned and cut into 4 pieces
  • 1/2 c. coarsely ground black peppercorns
  • 3 Tbsp. peanut oil
  • 1 Tbsp. olive oil

Method

  • In a sealable plastic bag, combine soy sauce, garlic, lemon juice and sugar.
  • Add salmon; coat well and let marinate, sealed and chilled for at least 30 minutes.
  • Remove salmon from bag (discard marinade) and press about 2 teaspoons pepper into each piece to coat.
