Ingredients
- 3 eggs
- 1 1/2 c. sugar
- 1/2 c. buttermilk
- 3 Tbsp. butter
- 1 Tbsp. all-purpose flour
- 2 Tbsp. lemon juice
- 1 tsp. lemon extract
- 1 unbaked 9-inch pastry shell
Method
- Beat eggs.
- Add next 6 ingredients and mix well.
- Pour into pastry shell.
- Bake at 425° for 10 minutes.
- Place foil over edges of crust and bake at 450° for 10 minutes longer or until set.
- Let cool on wire rack.
- Makes 1 (9-inch) pie.
