Ingredients

  • 2 1/4 cups white flour
  • 1/2 teas salt
  • 2 teas cinnamon
  • 1/4 teas ginger
  • 1 cup brown sugar
  • 3/4 cup white sugar
  • 3/4 cup corn oil
  • 1 cup chopped pecans
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg beaten
  • 1 cup butter milk

Method

  • Mix together in a large bowl the flour, sale, 1 tsp cinnamon, finer, both sugars and corn oil.
  • Remove 3/4 of the mixture and to it add the nuts and remaining teaspoon of cinnamon. Mix well and set aside.
  • To the remaining batter, add the baking soda, baking powder, egg and buttermilk.
  • Pour into well greased pan, sprinkle the nut topping evenly on top and bake at 350 for 40-45 minutes
