- 2 1/4 cups white flour
- 1/2 teas salt
- 2 teas cinnamon
- 1/4 teas ginger
- 1 cup brown sugar
- 3/4 cup white sugar
- 3/4 cup corn oil
- 1 cup chopped pecans
- 1 tsp baking soda
- 1 tsp baking powder
- 1 egg beaten
- 1 cup butter milk
Method
- Mix together in a large bowl the flour, sale, 1 tsp cinnamon, finer, both sugars and corn oil.
- Remove 3/4 of the mixture and to it add the nuts and remaining teaspoon of cinnamon. Mix well and set aside.
- To the remaining batter, add the baking soda, baking powder, egg and buttermilk.
- Pour into well greased pan, sprinkle the nut topping evenly on top and bake at 350 for 40-45 minutes
