Ingredients

  • 12 cup olive oil
  • 12 cup white balsamic vinegar
  • 3 tablespoons chopped parsley
  • 2 tablespoons coarse grain mustard
  • 3 tablespoons pesto sauce
  • 12 teaspoon black pepper
  • 1 tablespoon minced garlic
  • 1 (2 ounce) jar diced pimentos, drained
  • 1 (8 ounce) package sharp cheddar cheese
  • 8 ounces cream cheese

Method

  • Combine first eight ingredients in a bowl and blend together well to create a marinade.
  • Slice cheddar block in 1/8 inch slices.
  • Slice cream cheese block in 1/8 inch slices.
  • Place cheeses in shallow baking dishes alternating cheddar and cream cheese slices.
  • Pour marinade over cheese.
  • Cover and marinate at least 24 hours.
  • Serve by transferring sliced cheese on to platter.
  • Pour marinade over top.
  • Cooking time is marinating time.
  • Garnish.
