Ingredients

  • 1/2 cup butter, chopped, at room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 None eggs
  • 2 1/4 cups self-rising flour, sifted
  • 2/3 cup milk
  • None None FOR THE ICING
  • 2 cups powdered sugar
  • 1 tbsp butter
  • 1/2 tsp vanilla extract

Method

  • Preheat oven to 350°F. Lightly grease an 8 inch cake pan. Line base with parchment paper.
  • Beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition and scraping down sides of bowl. Fold in flour alternately with milk, beginning and ending with flour. Transfer to prepared pan, smooth top and bake for 40-45 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  • For the icing, sift powdered sugar into a bowl. Add butter, vanilla and 1 tbsp hot water. Beat until a smooth, spreadable consistency. Spread over cooled cake.
