Ingredients

  • 50g dried porcini mushrooms
  • 400g beef fillet
  • 1 garlic clove, sliced
  • Thyme and black pepper, to taste
  • 8 slices pancetta

Method

Soak mushrooms until they swell and then chop; reserve water. Preheat oven to 200C. In the meantime, brown beef in a pan. Remove and reserve juices in the pan. Add sliced garlic to pan and allow to soften.

Add mushrooms. Add plenty of chopped thyme and pepper. Add 3 tbsp of the mushroom water to pan, and reduce. Lay overlapping pancetta slices in a baking dish. Coat beef in the mushroom mix and wrap in the pancetta. Roast for 30 minutes, remove from oven and rest for 10 minutes.

Beans with mustard and vinegar

Fry green beans with capers until they start to go soft - but not too soft. Mix with teaspoon of French mustard and a good vinegar. Add pepper to taste.

Hints and tricks

1. Add mushrooms and grated carrot to minced meat and use to make burgers.

2. Trim and roll chicken tenderloins in flour, egg, breadcrumbs and ras el hanout. Cook as a schnitzel

To Serve

Serve with roast vegetables and beans.
