Ingredients

  • 6 boneless, skinless chicken breast halves
  • 1/3 c. flour
  • 2 egg whites, slightly beaten
  • 1 c. Italian bread crumbs
  • 1 Tbsp. grated Parmesan cheese
  • 3 Tbsp. oil
  • 1/4 c. red onion, chopped
  • 1 garlic clove, chopped
  • 2 c. spaghetti sauce
  • 6 slices Mozzarella cheese

Method

  • Dredge chicken in flour, then dip in egg whites until coated. Combine bread crumbs and Parmesan cheese. Roll chicken in bread mixture until completely covered. Saute onions and garlic in oil until tender. Add chicken and cook 5 minutes on each side. Transfer to baking pan and top with spaghetti sauce and 1 slice of Mozzarella cheese per chicken. Bake at 350° for 20 minutes or until well done.
