Ingredients

  • 6 large boneless skinless chicken breasts
  • 2 8oz. pkgs. cream cheese, @ room temp.
  • 12 oz. chunky blue cheese dressing
  • 12 oz. bottle of Franks Red Hot Original Cayenne Pepper Sauce
  • 8 oz. shredded cheddar
  • Frito Scoops,crackers, or celery sticks for serving

Method

  • Poach chicken breasts. Place breasts in large deep skillet or pot and cover with cool water. Bring to boil, reduce to simmer and cook covered for 25-30 minutes until center of chicken is no longer pink. When chicken is cool, shred it by hand into matchstick size pieces. Cut any long pieces in half.
  • Preheat oven to 350 degrees. Place cream cheese in large mixing bowl and mash with large fork until creamy. Slowly add blue cheese dressing until incorporated. Mix in shredded chicken. Add 8 oz. of pepper sauce or more to taste. Add half of shredded cheddar cheese. When thoroughly mixed pour into 9 x 13 in. glass baking dish.
  • Bake at 350 for 20 minutes or until hot and starting to bubble. Sprinkle rest of cheese on top and continue to bake for 5-6 minutes or until cheese melts. Serve with Fritos Scoops or crackers.
