Ingredients
- 6 medium potatoes
- grated Cheddar cheese
- 1/2 bacon, cooked
- 2 green onions
- sour cream (optional)
Method
- Bake potatoes in oven until done.
- Let cool.
- Cut potatoes into 3 equal parts and scoop out potatoes, leaving skin intact with a shallow layer of potato left in.
- Fry potato skins in oil until brown and crispy.
- Arrange skins on a cookie sheet and top with bacon, grated cheese, and green onions.
- Bake in oven only until cheese melts.
- Use sour cream for dipping.
