Ingredients

  • 6 medium potatoes
  • grated Cheddar cheese
  • 1/2 bacon, cooked
  • 2 green onions
  • sour cream (optional)

Method

  • Bake potatoes in oven until done.
  • Let cool.
  • Cut potatoes into 3 equal parts and scoop out potatoes, leaving skin intact with a shallow layer of potato left in.
  • Fry potato skins in oil until brown and crispy.
  • Arrange skins on a cookie sheet and top with bacon, grated cheese, and green onions.
  • Bake in oven only until cheese melts.
  • Use sour cream for dipping.
