Ingredients
- 3 c. cooked rice
- 4 hard-boiled eggs
- 2 oz. jar pimiento, chopped
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. mayonnaise, mixed with 1 tsp. horseradish or mustard
Method
- When rice and eggs are cold, chop the eggs and add to the rice.
- Add all ingredients and mix well. Better if made the day before serving.
