Ingredients
- 1 1/2 c. long grain rice
- 1 c. finely chopped onion
- 1 stick butter or margarine
- 2 c. beef bouillon soup
- 1 (2 1/2 oz.) can chopped mushrooms
Method
- Place the first 3 ingredients in a frying pan.
- Cook over medium heat, stirring until brown (about 20 minutes).
- Add bouillon and mushrooms.
- Place in a 1 1/2-quart casserole and cover.
- Bake at 300° for 1 hour and 20 minutes.
- Remove cover. Bake 10 minutes longer.
- Yields 6 to 8 servings.
