Ingredients

  • 3 to 4 eggs
  • 3 c. milk (skim)
  • 5 to 6 slices whole wheat bread, cubed
  • 2 to 3 c. brown rice, cooked
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 c. brown sugar
  • 1/2 c. sugar

Method

  • Beat eggs, sugar, milk and vanilla together.
  • Add cinnamon. Stir in rice, bread and raisins.
  • Bour into 3 quart casserole. Bake at 350° for 45 to 60 minutes.
  • Pudding is done when knife inserted between edge and center comes out clean.
  • Let cool to warm!
  • Great for breakfast and desserts.
