Ingredients

  • 1 c. crab meat
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1/3 c. cream cheese, softened
  • 20 sq. wonton wrappers
  • 1 egg white
  • salad oil

Method

  • Combine crab meat, salt and pepper in a bowl.
  • Blend well.
  • Add cream cheese.
  • Mix until smooth.
  • Place a scant 1/2 tablespoon of crab mixture in wonton wrapper.
  • Brush edges of wrapper with egg white.
  • Fold wonton diagonally to form a triangle.
  • Seal edges. Again brush edges with egg white.
  • Join all corners of the triangle and crimp together.
  • Deep fry in salad oil, heated to 375°, for 2 minutes.
  • Remove from heat and drain well after browning evenly. Serve hot.
  • Makes 20 puffs.
