Ingredients
- 1 c. crab meat
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1/3 c. cream cheese, softened
- 20 sq. wonton wrappers
- 1 egg white
- salad oil
Method
- Combine crab meat, salt and pepper in a bowl.
- Blend well.
- Add cream cheese.
- Mix until smooth.
- Place a scant 1/2 tablespoon of crab mixture in wonton wrapper.
- Brush edges of wrapper with egg white.
- Fold wonton diagonally to form a triangle.
- Seal edges. Again brush edges with egg white.
- Join all corners of the triangle and crimp together.
- Deep fry in salad oil, heated to 375°, for 2 minutes.
- Remove from heat and drain well after browning evenly. Serve hot.
- Makes 20 puffs.
