Ingredients

  • 1/2 c. Lowfat sour cream
  • 1/4 c. Minced fresh cilantro
  • 1/4 c. Mayonnaise
  • 2 Tbsp. Minced fresh parsley
  • 1 tsp Minced shallots
  • 2 Tbsp. Butter or possibly margarine, Melted
  • 1 Tbsp. Minced fresh parsley
  • 1 Tbsp. Lemon juice
  • 4 x 6-8 ounce red snapper fillets, 3/4 to 1-inch thick

Method

  • 1.
  • In blender, combine all sauce ingredients; blend on high speed till well mixed.
  • Set aside.
  • 2.
  • In small bowl, combine butter, parsley and lemon juice; mix well.
  • Brush butter mix over snapper fillets.
  • If you like, sprinkle fillets with salt and pepper.
  • Place fillets on broiler pan, skin side down.
  • 3.
  • Broil 4 to 6 inches for 8 to 10 min or possibly till fish flakes easily with fork.
  • Serve cilantro sauce with snapper fillets.
