Ingredients
- 10 oz. pkg. frozen chopped broccoli
- 2 eggs, beaten
- 1 c. finely crushed whole wheat crackers
- 1/2 c. milk
- 1/2 tsp. minced dried onion
- 16 oz. can cream-style corn
- 8 oz. can whole kernel corn, drained
- 1 Tbsp. butter or oleo, melted
Method
- Cook broccoli according to package directions.
- Drain well. Spread broccoli over bottom of a 10 x 6 x 2-inch baking dish.
- In a mixing bowl, combine eggs, 1/2 cup crushed crackers, milk and onion.
- Stir in both corns.
- Spread mixture over broccoli. Combine remaining crackers and butter; sprinkle on top of vegetables.
- Bake uncovered at 350° for 35 minutes until knife inserted in middle comes out clean.
- Makes 8 servings.
