Ingredients

  • 10 oz. pkg. frozen chopped broccoli
  • 2 eggs, beaten
  • 1 c. finely crushed whole wheat crackers
  • 1/2 c. milk
  • 1/2 tsp. minced dried onion
  • 16 oz. can cream-style corn
  • 8 oz. can whole kernel corn, drained
  • 1 Tbsp. butter or oleo, melted

Method

  • Cook broccoli according to package directions.
  • Drain well. Spread broccoli over bottom of a 10 x 6 x 2-inch baking dish.
  • In a mixing bowl, combine eggs, 1/2 cup crushed crackers, milk and onion.
  • Stir in both corns.
  • Spread mixture over broccoli. Combine remaining crackers and butter; sprinkle on top of vegetables.
  • Bake uncovered at 350° for 35 minutes until knife inserted in middle comes out clean.
  • Makes 8 servings.
