Ingredients

  • 1 c. instant nonfat dry milk
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. garlic powder
  • 2 1/4 c. water
  • 1 can condensed chicken broth (undiluted)
  • 1/4 c. margarine
  • 1/4 c. chopped scallions or grated onions
  • 1 pkg. frozen broccoli, defrosted
  • 1 1/2 c. Swiss cheese, shredded (6 oz.)
  • chopped parsley for garnish

Method

  • Combine dry milk, flour and seasonings in a 3-quart heavy pot. Stir in water and condensed chicken broth until smooth.
  • Bring to boil over medium heat.
  • Stir constantly.
  • Boil and stir for 1 minute.
  • Briefly saute onion in margarine.
  • Stir onion mixture and broccoli into thickened mixture.
  • Continue to stir until broccoli is heated.
  • Pour into soup serving bowl.
  • Sprinkle cheese over top.
  • Add parsley as garnish.
  • Serve immediately.
